Fall Soups we’re loving!🍂

One my absolute favorite things about this time of year is making homemade soup! It’s easily one of Iris’s favorite meals in the world and it’s such a great way to get tons of healthy foods into her meal! Jesse, Iris, and I all love trying out new recipes and we all love one thing, flavor, lots of flavor! So needless to say all three of these soups have delicious flavor that we all agree are repeats to make this season!

Carrot-Ginger Soup with Curry and Coconut milk

This soup is absolutely declious! Even if you are a sceptic of a lot of different flavors I’m telling you it’s so so yummy! It will be a repeat this autumn and winter season! We all agreed it is one of the best soups we’ve had! Super great flavor and it’s full of healthy foods! Try this one out, you won’t be disappointed!

Easy Healthy Chicken and Farro Soup

This is a soup I made up somewhat on a whim just because who doesn’t love a classic chicken noodle soup, but I wanted to use something besides noodles! I absolutely love farro and it’s very similar to barley so I decided to try it and I’m here to say we all Love this soup! Here’s a list of what I use below!

8 cups Pacific Chicken Bone Broth Unsalted

5 stalks of chopped celery

2 cups chopped carrots

1 large chopped yellow onion

3/4 garlic cloves chopped

1 to 2 tbsp of Olive Oil

2 1/2 cups cooked chicken

3 bay leaves

1 1/4 cup farro

I also like to dash in some fresh parsley!

salt and pepper to your taste, you will definitely have to add a bit more salt since broth isn’t salted!

( I like to use organic ingredients for everything but that is optional of course!)

So essentially it’s super easy. Cook your chicken first and then chop it up into tiny pieces. Then in your pot add the olive oil and the onion and garlic and let cook down a bit, then add in the carrots and celery and I like to let that cook down for a few minutes on a medium heat. Then add in all the other ingredients including the chicken and broth. Bring to a Boil and then let simmer ( about 45) until farro is tender and veggies soft. Then remove the Bay leaves and enjoy!🤗

Roasted Tomato Basil Soup

So I’m typically not a huge tomato soup person. I do not like tomato soup from a can or really most tomato soups however I do really like this recipe! It’s got a lot of flavor and I blend mine in my blender so that it’s not super smooth but still has a little bit of texture! Iris loves tomato soup so I wanted to try one that maybe I would like too! I found this recipe and thought it looks yummy and it definitely is a winner! I love all of the fresh basil and the roasted fresh tomatoes, garlic, and onion pack a delicious punch!

I altered a few things! I used chicken bone broth instead of regular chicken stock and I did not use red pepper flakes! I also like I said above didn’t blend it until purely smooth, I left some texture which in my opinion was super yummy!
